J’ai choisi de p\u00e9trir \u00e0 la main. Pourquoi?<\/p>\n

– C’est un geste ancestral qui nous replonge dans notre histoire et ancre une r\u00e9alit\u00e9.<\/p>\n

– C’est une philosophie de vie aussi. Un retour \u00e0 la mati\u00e8re. On ressent la p\u00e2te. <\/span><\/p>\n

– Dans la panification, la p\u00e2te est mieux respect\u00e9e. Le r\u00e9seau de gluten est plus souple pour rendre le plus possible le pain digeste. La p\u00e2te est moins oxyd\u00e9e, les ar\u00f4mes sont pr\u00e9serv\u00e9s.<\/span><\/p>\n

– C’est un choix \u00e9cologique aussi pour mieux respecter l’environnement. Pas besoin d’\u00e9lectricit\u00e9. Le besoin en mati\u00e8re est simple: du bois, du h\u00eatre pour \u00eatre plus pr\u00e9cise. C’est un bois alimentaire qui pr\u00e9serve les ar\u00f4mes \u00e9galement. J’ai fait travailler des artisans locaux (\u00e0 G\u00e9menos \u00e0 l’atelier de Saint Pons)<\/p>\n

Et \u00e7a ne tombe pas en panne !! <\/p>\n

C’est physique? Oui mais pas tant, je m\u00e9lange juste les ingr\u00e9dients (frasage) jusqu’\u00e0 l’obtention d’une p\u00e2te homog\u00e8ne. Quelques rabats, pour donner du corps \u00e0 la p\u00e2te, et c’est tout !<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Et pour le cuir j’ai choisi \u00e9galement le bois<\/p>\n

– Encore aussi une affaire de mati\u00e8re. C’est beau la flamme du bois. C’est noble. Un retour \u00e0 la mati\u00e8re \u00e9galement<\/p>\n

– C’est un choix \u00e9cologique \u00e9galement. Certes il y a des rejets de CO2 mais c’est de la chauffe directe. Pas besoin de produit d’\u00e9lectricit\u00e9 de stockage. C’est un four rustique, m\u00e9canique. On peut profiter \u00e9galement de l’inertie thermique du four en acier r\u00e9fractaire et des soles en pierre Le Panyol. <\/span><\/p>\n

– C’est un choix pratique aussi. J’aurais voulu un four \u00e0 bois b\u00e2ti avec une chauffe directe mais la configuration du terrain et du fournil ne le permettait pas. Et un four \u00e0 bois on peut le mettre dehors avec un enfournement \u00e0 l’int\u00e9rieur! donc il ne prend pas de place dans le fournil.<\/span><\/p>\n

J’ach\u00e8te le bois en local, chez DBRE \u00e0 Peypin (13) pour le ch\u00eane de Provence et du r\u00e9sineux dans les Hautes Alpes (05) non loin de mon fournisseur de farines.<\/span><\/p>\n


<\/p>\n

Le four:<\/b><\/u> c’est un gros b\u00e9b\u00e9 d’1.5 tonnes, de 1.80m de diam\u00e8tre en acier r\u00e9fractaire. La aussi j’ai fait appel \u00e0 un fournisseur fran\u00e7ais Fermaconstruction situ\u00e9 dans l’Aude \u00e0 Alaigne (11). <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
